The Salina caper: a local treasure

At Il Cappero Restaurant, as the name suggests, we have chosen to celebrate an extraordinary ingredient that does justice to our passion for Sicilian cuisine: the Salina caper.

This gastronomic treasure, native to the island of Salina, part of the Aeolian Islands, is known for its intense flavour and inimitable qualities, setting it apart from other varieties. Growing in an environment characterised by volcanic soil, these capers acquire indeed a distinctive flavour and fragrance.

The cultivation of capers is a traditional art handed down from generation to generation. Each caper is harvested by hand during the summer, when the buds are at their peak, and processed using traditional methods that preserve its unique flavour.

The Salina caper is also a symbol of the island and its culture. Indeed, the tradition of caper cultivation reflects the resilient cultural identity of Salina and is a source of pride for local producers.
